ROBERT KRAFT'S SUPER BOWL CHILI

This one is appropriately named since Mr. Kraft's Patriots look to go all the way this year. Mr. Kraft published this recipe in the 1997 NFL family cookbook approximately three years after aquiring ownership of the New England Patriots. According to Mrs. Kraft this is a (GI-GUNGUS not a real word) recipe that feeds about 35 people, And it sure looks like it, She also recomends serving with: Finely chopped onions, Grated cheddar cheese, Sour cream, and some Sourdough bread. So if you love chili? and you love the Patriots? and your having a SUPERBOWL PARTY!!! You gotta give this one a try. Hope you enjoy. Average Joe.

1/2 cup olive oil
1 3/4 lbs yellow onions, coarsely chopped
2 lbs sweet italian sausage, casings removed
8 lbs lean ground beef
1 1/2 tbs fresh-ground black pepper, or to taste
2 cans (12 oz each) tomato paste
5 tbs garlic, minced
3 oz ground cumin seed
4 oz chili powder
1/2 cup dijon mustard
4 tbs salt
4 tbs dried basil
4 tbs dried oregano
5 cans (35 oz each) italian plum tomatoes
1/2 cup dry red wine
1/4 cup lemon juice
1/2 cup fresh dill, chopped
1/2 cup fresh italian parsley, chopped
1/2 cup fresh cilantro, chopped
3 cans (16 oz each) dark red kidney beans

1. Heat the olive oil in a very large soup kettle. Add the onions and cook over low heat, covered, until tender and translucent, about 10 minutes.
2. Raise the heat to medium and add the sausage meat and ground beef. Stir often until the meat is completely browned.
3. Drain off as much fat as possible.
4. Reduce the heat to low. Stir in the black pepper, tomato paste, garlic, cumin, chili powder, mustard, salt basil, and oregano.
5. Drain the tomatoes and add to the pot with the red wine, lemon juice, dill, parsley, and cilantro. Drain the kidney beans and add them to the pot. Stir well. Simmer uncovered, for 15 minutes. Taste and correct seasoning. If you like your chili spicier, add more chili powder to taste.
