This one's pretty basic, back in the days before we had chili masters and the like. But not bad considering the era. However, if your like me, you'll want to doctor it up a bit. So here are a few things I would do, but feel free to experiment a little.
First off add 2 cloves chopped garlic
Omit the cloves and the fat
Add 1/2 tsp tabassco
Add 2 tbsp Cumin
Omit bell pepper
Add 1 chopped jalepeno
Keep the bay leaf if you like. Seems all recipes from this era call for one, can't hurt. If you're in a hurry and want to eat today, you can use canned beans, seasoned or not, and the same goes for the tomatoes. These days they come in a variety of flavors diced and ready to go.
MOMS RECIPE FROM 1960
1 1/2 cups red chili beans
1 large onion, sliced
1 green pepper, chopped
1 pound ground beef
3 tbs fat
4 cups tomatoes, chopped
1 to 2 tbsp chili powder
1 tsp salt
3 whole cloves
1 bay leaf
Dash paprika
Dash cayenne pepper
Soak chili beans overnight. Cook in boiling water until tender. Drain Brown onion, green pepper, and meat in hot fat. Add tomatoes and seasonings. Simmer 2 hours adding water if necessary. Add beans; heat thoroughly.
Makes about 6 servings
